Low Carb “Fiesta in your Mouth” Chicken Soup
This was our dinner tonight. None of us could stop eating. DH had to unbutton his pants right there at the dinner table. Enough said?
“Fiesta in your Mouth” Chicken Soup
1 stick butter (man, don’t it got to be good if it starts with a stick of butter?)
1 medium onion, chopped
3-4 cloves garlic, crushed or minced
1 bell pepper, chopped
3 cups chicken broth or stock
1 can Rotel tomatoes
2 teaspoons cumin
1 tablespoon oregano
4 cups cooked, diced chicken
2 small cans sliced black olives
1/2 cup Parmesan cheese
4 oz. cream cheese, cubed
1 cup cream (half/half or heavy)
Saute onions and garlic in butter in heavy bottomed soup pot until tender. Add bell pepper, chicken broth, tomatoes, cumin, oregano and chicken. Allow to boil, turn down heat to slow simmer and cook for at least 1 hour. Twenty minutes before serving, add Parmesan cheese, cream cheese, and cream. Garnish with sour cream or cheddar cheese. Makes 6-8 big servings.
The starting point for this recipe is here, at fabulousfoods.com. I didn’t feel the low carb beer was necessary, omitted the celery, added black olives and oregano, and generally changed enough of it to make it my own. Plus “Fiesta in your Mouth” is totally witty.
Of course since it does happen to be Thanksgiving time feel free to use turkey in place of the chicken.
