Low carb faves

Yesterday I mentioned carbohydrate restricted eating.  At the moment, technically we are following the Induction phase of the Atkins diet, which is about as restricted as it gets.  We generally eat less than 20 grams of carbs a day, and all of those carbs come from non-starchy vegetables.

It’s really not that bad - the first few days bring something called “induction flu” - headache and general yucky feeling as your body adjusts to running on fat as opposed to sugar and starches.  The hardest part is finding stuff to eat besides hamburger, salad and eggs.  This lady - Jamie van Eaton or Cleochatra - publishes fabulous low carb recipes here and here .  She has great recipes for zucchini-crust pizza, plus she makes me laugh.

Chocolate was a problem for a long time, until I discovered Chocoperfection bars.  They are expensive but I eat it sparingly so it works out.  One other dessert that I never, ever thought I would be caught dead eating is - ready? - Cinnamon Pork Rinds .  I know.  Sounds awful.  But they taste like churros!  They’re so yummy.

Even with all the new and exciting recipes in the world, enthusiasm for meat, cheese, eggs and green vegetables can wane.  Sugar-free Sheila is a real motivator.  She has been eating this way for 7 years and looks and feels great.  She also addresses all the arguments of nay-sayers.

And that’s how I low-carb it.
